These were devoured by my teens as soon as they came home from school. Something clicks to their muscle when they hear the word “oat”.
Οats + banana = perfect cookie! I used only honey instead of white sugar and they came out just right. Not overly sweet, just absolutely delicious!

Oats + banana = perfect cookie! I used only honey instead of white sugar and they came out just right. Not overly sweet, just absolutely delicious!
Ingredients
24 cookies
- 200 grams banana mashed with a fork
- 80 ml olive oil
- 1 egg
- 136 grams Oats
- 80 grams almonds ground (not too finely)
- 20 grams desiccated coconut
- 160 grams wholewheat flour
- ¼ tsp salt
- ½ tsp baking soda
- 100 grams honey
- 1 vanilla sachet
- 80 grams dried cranberries
Instructions
- Preheat the oven to 170° C, fan.
- In a large bowl, mash the banana with a fork. Add the olive oil and the egg. Whisk to combine. Add all the remaining ingredients except the cranberries and mix with a spatula. Finally add the cranberries and mix again.
- Line pans with non-stick paper. With a spoon or cookie scoop, shape balls from the mixture and place them on the prepared pans. Curve and smooth the shape with wet hands if you wish. Bake in the preheated oven for 20-25 minutes. The cookies will be dark on the outside but soft like cake in the center.
