Chicken Burgers with vegetables

Ingredients
  

For six burgers

  • 1 kg of minced chicken
  • 1 large onion, coarsely grated
  • 1 large green zucchini, coarsely grated
  • 2 spring onions, finely chopped
  • ½ cup mint leaves, finely chopped
  • 2 Tbsp heaped strained yoghurt
  • 2 tsp heaped Dijon mustard
  • 2 tsp sea salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika, hot
  • 1 tsp sweet paprika
  • 1 tsp dried oregano
  • ½ tsp turmeric
  • 1 cup fresh breadcrumbs
  • 200 grams feta cheese, crumbled
  • A drizzle of olive oil

For the potatoes:

  • 2 Tbsp olive oil
  • 1 pack spicy potato wedges

For the coleslaw salad:

  • 400 grams of coleslaw mix, (cabbage-carrot)
  • 1 green apple, coarsely grated
  • 2 Tbsp strained yoghurt
  • 2 Tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 spring onion, finely chopped
  • 2 Tbsp apple cider vinegar
  • ½ tsp black pepper
  • Sea salt to taste

To serve:

  • 6 sesame burger buns
  • Tzatziki

Instructions
 

  • Prepare the burgers: Add all the ingredients, except the bread and feta cheese, to a bowl. Mix well to combine. Add the bread and feta cheese and mix again. Preheat oven to 200˚C, fan. Shape 300 grams burgers, and place them on a large baking tray lined with non-stick paper. Drizzle with a little olive oil and bake in the preheated oven for 30-35 minutes.
  • In another baking pan, add 2 tablespoons of olive oil and place the potato wedges. Bake on the bottom rack of the oven for 30-40 minutes until crispy (see note).
  • Place the vegetables for the salad in a large bowl. Add the green apple. In a medium bowl, combine all remaining ingredients and toss to coat the vegetables. Mix well.
  • To serve, heat the burger buns on a grill. Brush the cut surface with 1 tablespoon full of tzatziki. Top with a burger patty. Add 1-2 tablespoons of coleslaw and top with the bun. Serve immediately with the potato wedges.

Notes

The potatoes may need a little more time in the oven. Remove the burgers and transfer the wedges to the middle rack. At this stage you can turn the oven up to 220˚ C to crisp them up.
