Some people say, that if you want to sell your house, throw an apple pie in the oven when the buyers arrive. The smell is so inviting, so cosy, so homey, so unbelievably mouthwatering. This galette is no exception.                                       

It’s a layer of deliciousness with the tangy taste of the apples, that takes you straight to galette heaven (galette heaven, really?). Well you know what I mean. Serve it with a scoop of vanilla or mastic ice cream and you’ve got yourself a wow.

Ingredients
  

For the dough

  • 185 grams butter
  • 210 grams flour for all uses
  • 2 Tbsp granulated sugar
  • ½ tsp salt
  • 60 ml ice water

For the apples

  • 4 yellow apples 800 grams
  • ½ lemon the juice
  • 60 grams of granulated sugar
  • ½ tsp cinnamon
  • 30 grams butter
  • ½ Tbsp sugar brown for sprinkling

Instructions
 

  • Make the dough: Divide the butter into spoonfuls and put it in the freezer for 10 minutes.
  • Add the flour, sugar and salt to a food processor. Beat on high speed until combined. Add the frozen butter and beat 20 times, until the mixture resembles small peas. Add the ice water and beat another 20 times, until the dough starts to come together.
  • Place a large piece of plastic wrap on your workbench and flour it. Place the dough on the plastic film and press with your palm to create a disk. Wrap in plastic wrap and refrigerate for at least an hour.
  • At this stage, you can leave the dough in the refrigerator for 2 days.
  • Prepare the apples: Clean and peel the apples. Cut into thin slices (about 2 mm per slice). Put the slices in a bowl and pour the lemon juice on top. Add the sugar and cinnamon to the bowl and mix well.
  • Preheat the oven to 175° C fan. Remove the dough from the refrigerator. Place a piece of parchment paper on our workbench and sprinkle it liberally with flour. Transfer the dough to the paper and sprinkle with a little more flour. Roll out the dough into a circle, about 35 cm.
  • Spread the apple slices on top, leaving a border of 5 cm. Fold the edges of the dough to close the apples. Sprinkle the apples and dough with ½ tablespoon of brown sugar. Transfer the apple pie with the help of the paper to a shallow baking tray. Scatter pieces of butter in places. Bake for 50-55 minutes until the apples take on beautiful colors and the dough is golden brown and baked. If you see that the apples are starting to burn, cover the apple pie loosely with aluminum foil during the last 10 minutes of baking.
  • Enjoy the apple pie warm or at room temperature.
