Can never say no to these. In fact, I wouldn’t mind having this dish on repeat. They are finger licking good! And it’s because of this delicious home made BBQ sauce. I never use store bought BBQ sauce, as it may have a lot more sugar than the one you will cook at home. You do need the sugar for these wings to caramelize but not too much of it. As they roast, they will darken and become sticky and delicious and highly addictive.
Ingredients
- 1 kg chicken wings
For the spice mix
- 1 Tbs dark brown sugar
- 1 Tbs paprika
- ½ tsp ground cumin
- ½ tsp black pepper
- ¼ tsp cayenne pepper
- Salt to taste
For the BBQ sauce
- 1 Tbs olive oil
- 1 small onion, chopped
- 2 garlic cloves, crushed
- ½ Tbs ginger, chopped
- ¼ cup tomato ketchup
- 2 Tbs cider vinegar
- 1 Tbs soy sauce
- 2 Tbs dark brown sugar
- 1 tsp paprika
- ½ tsp ground cumin
- ¼ tsp cayenne pepper
- Salt and pepper
Method
In a small bowl mix together all ingredients for the spice mix.
Put chicken wings in a larger bowl and season with salt. Sprinkle the spice mix on top of the wings and mix very well to distribute the spices. Cover bowl and refrigerate for up to 24 hours.
Make the BBQ sauce. Put olive oil in a medium size saucepan over medium-high heat. Add the onion, garlic and ginger. Cook until onion is soft about 2-3 minutes. Add the remaining ingredients for the BBQ sauce and stir to mix. Bring to the boil, then lower the heat and simmer uncovered for 10 minutes until sauce is slightly thicker.
Cool sauce slightly then transfer in a blender or foood processor and blend on high speed until sauce is smooth. You can make sauce up to 48 hours in advance. Eep covered in the fridge.
Preheat oven to 200 C. Spread wings in one layer, on a baking tray brushed with oil. Bake wings for 30 minutes.
Take tray out of the oven and increase temperature to 220 C. Brush wings with about half of the BBQ sauce. Bake 5 minutes longer.
Turn wings and brush with the remaining BBQ sauce. Bake 5 minutes longer until wings are dark and caramelized.
Serve at once with lots of napkins.
