Whole-wheat pasta with mushrooms, walnuts, goat cheese and arugula

I love having all kinds of mushrooms at home. They are easy, quick and delicious as the main ingredient in soups, dips or salads. But they are out of this world amazing with whole-wheat pasta. It’s probably their earthy flavor that works so well with these absolutely delicious “Mitsides” fusilli. The walnuts add an extra crunch and extraordinary taste so don’t even think of leaving them out. Finish this dish with creamy goat cheese and fresh rocket leaves. In fact, it feels as if I have been making it forever since every Christmas, for the last 20 years, I make chicken liver paté for my family and guests. Slow Roasted Chicken in Coconut Milk

Simply amazing. One of the tastiest, oven roasted chicken dishes ever. The bird slowly roasts in a coconut milk bath, flavored with lemon grass, garlic and ginger. The result is a moist and incredibly flavorful dish, with a wickedly good, slightly spicy sauce you will want to eat with a spoon. Make sure you will butterfly your chicken to maximize the amount of meat submerged in the sauce. Slow roasting is the key here as a higher temperature may burn the coating. Make this today. Apple Cheesecake

I’m one of those people who are not crazy about cheesecake. I wouldn’t say no to a piece, of course, but if I had to choose a dessert from a menu, cheesecake would not be my first choice. That said, I understand that cheesecake is a divine dessert. It’s creamy and velvety with a slight tang and saltiness from the cheese. Combined with any fruit is heaven on a plate. Now imagine eating an apple pie topped with cheesecake. You get the sweetness of the apples, the aroma of cinnamon, the crunchiness of the almonds and the creaminess of the cheesecake.
