The ultimate TV food. All you need to think about, is how spicy you want it. This dish is so rich in flavor. Served with cheddar cheese and guacamole, it makes the best «Film night» dinner. The flavor improves the next day.
Ingredients
- 500 grams beef mince
- 2 Tbs olive oil
- 2 medium onions, finely chopped
- 3 cloves garlic, crushed
- 1 tsp chili powder
- 2 tsp ground cumin
- 2 tsp ground coriander
- ½ tsp cinnamon
- 2 Tbs all purpose flour
- 150 ml red dry wine
- 300 ml beef stock
- 400 grams crushed tomatoes (from a carton or can)
- 400 grams red kidney beans, drained
- 3 Tbs tomato paste
- 1 tsp sugar
- 1 tsp dried oregano
- 1 bay leaf
- salt and pepper to taste
To serve
- Nacho chips
- 1 cup sour cream
- Grated cheddar cheese
- Guacamole
Method
Put the olive oil in a large pot, over high heat. Add the mince and onions. Cook stirring occasionally, breaking up any lumps of meat with a spatula, until the meat starts browning. Add garlic, chili powder, cumin, coriander and cinnamon. Cook a couple of minutes more. Add the flour and mix well. Pour in the wine and beef stock, stirring and mixing everything together. Add the tomatoes, beans, tomato paste, dried oregano, sugar and bay leaf. Season with salt and pepper and partly cover the pot. Lower the heat and simmer for one hour, stirring occasionally to prevent chili from sticking to the bottom of the pan. Serve with nacho chips, grated cheddar, sour cream and guacamole.
